It appeared that everybody was present and excited to git goin’ upon opening my communiTEA packet this morning. Chai spicy aromas were noted. Bring on my trusty steed, boleadoras and boot spats, I’m ready to ride! Since this blend contained mate, I awakened my tea with two tablespoons of cool steep water in my ingenuiTEA steeper for a few minutes and then added 190ºF steep water on top to reach my 180ºF goal. I only do an awakening for the first steep. I steeped for six minutes to allow the chai spice flavors to bloom. This was a 12 ounce steep. When hot, a smooth mouthfeel was noted. Cinnamon and clove flavors were mild. I added ¼ teaspoon of sugar to intensify spicy flavors. When warm, moderate chai spicy aromas were noted. Black pepper zings from the mate were moderate. Moderate cardamom camphor flavors were noted. Cinnamon, clove and anise licorice flavors were strong. This was a toasty, smooth and very tasty chai blend! The chai spices blended together nicely without any competition among them. A second steep was even better. Great blend! This one got the hitch outta my git-along! (6 mins @ 180ºF, ¼ tsp sugar)

This is a very drinkable and friendly medium-bodied chai. Some are heavy like Masala chai and some are light like ones with a white tea base. This one would have been Goldilock's favorite of the three. She chose the middle bed that was neither too hard nor too soft. This chai with a toasted mate base gives the traditional chai spices a toasty lift sans the dark or malty notes of a black tea or delicate and mellow ones of a white tea. The almost coffee-like tea base lets the spices do the heavy lifting while letting them stand on its roasted shoulders. My CommuniTEA packet had 4 g/ 2 tsp of all ingredients including lots of cloves. I prepared for brewing by awakening the mate per Jim R. who uses a bit of cool water as a wake-up call. A couple of tbsp of cool water was used to gently douse the mate for the time it took me to gather a mug, sweetener, and a spoon. Then came 12 oz. of 185F water (the closest my elec. kettle came to 190F) for the final deluge. 5 minutes later a medium brown liquor with a scent of clove was ready to sip. It tasted pleasantly spicy with an accent of clove (liking clove is a plus) and I felt a tingly sensation at the back of my throat. I didn’t detect any bitterness or astringency and I could sip plain. My sweet tooth, though, always demands that extra something so I used some Adagio black tea honey. The honey added a nice sweet taste, mellowed the clove flavor, and brightened the toasty mate and spicy flavors beautifully. A resteep of 6 oz. was an easy and smoother sip. I did not sweeten this time so I could enjoy the now mellowed spices and gentle tang of mate. This tea will become a welcome addition to my little chai town in the pantry.

Gauchos are famous South American horsemen most well-associated with Argentina and Uruguay. Though similar to North American cowboys, they were also distinct in several ways. For example, instead of six-shooters, gauchos carried facóns, large knives that they would tuck into their sashes. They also used bolas (cords with weighted ends) in addition to lassos when rounded up or moving cattle. Finally, their drink of preference was actually a tea: yerba mate (pronounced "mah-tay"). Traditionally enjoyed in cups packed with leaves, the liquid was enjoyed through a filtered metal straw and often passed from person to person.
